GRAPE VARIETY: 100% Syrah.

PRODUCTION AREA: Montemesola, Carosino (TA).

TRAINING: Spur-pruned cordon-trained (4,500 plants per hectare).

HARVEST: First half of September.

VINIFICATION: Maceration and fermentation begin at low temperatures and then the temperature is raised to 26° C. During the first days of maceration, délestage is carried out daily. The wine is racked after roughly 15 days.

AGING: When malolactic fermentation is completed, the wine is aged in barrique for roughly 8 months.

AGING POTENTIAL: Drink right away or wait as it evolves over 3-4 years.

COLOR: Intense ruby red with light streaks of violet.

NOSE: Very intense and persistent. Ripe fruits with notes of quince jam. Cinnamon and cloves. Classic smoky finish, delicate and seductive with a blend of fruit and spice.

PALATE: Harmonious and well balanced delicacy, acidity, and integrated alcohol. The smoky finish lingers on the palate with a wide range of nuanced flavors.

PAIRING: A versatile wine that loves to paired with spicy, vibrant foods. Sauce- and meat-based, aromatic first and second courses.

SERVING TEMPERATURE: 18° C. (64° F.).
