GRAPE VARIETY: 100% Aglianico.
PRODUCTION AREA: Northeastern Murgia (Murge).
TRAINING: Spur-pruned high-trained (5,000 plants per hectare).
HARVEST: Mid-October.
VINIFICATION: After being destemmed and crushed, the must is macerated with skin contact for 15 days and fermentation is carried out at 26° C.
AGING: Once fermentation is completed, the wine is aged in barrique for approximately 12 months.
AGING POTENTIAL: Alticelli Aglianico will continue to evolve for 6-7 years, rewarding and surprising the patient collector.
COLOR: Bright ruby red with nuanced, dark violet undertones.
NOSE: The aromatic profile of this wine is confident and penetrating, typical of Aglianico. Its dried fruit notes offer a preview of its ethereal flavors and its aromatic complexity is composed by sweet, ripe red fruit tones, particularly brandy-cured wild cherries and quince.
PALATE: In the mouth, the freshness of this wine delivers aromatic notes, accentuating them thanks to a the superb balance of alcoholic content and delicacy found in this grape variety. The tannic components complete the circle of flavors, making them linger pleasantly on the palate.
PAIRING: Whether drunk in its youth or with some age, this Aglianico will go well with heavier foods, from aged ripe cheese to meats and game, not to mention other intensely flavored dishes. Heirloom beef Martina Franca beef and capocollo are among the winemaker’s favorite pairings.
