“Cantele Primitivo pairs well with nearly everything.”

General Manger at Il Fornaio in Seattle Ross Lincoff (above) has been working in the food and wine business for 35 years. Originally from Southern California, he settled in Seattle in 1990 and has been working with Il Fornaio for the last 6½ years.

We recently caught up with Ross and asked him his thoughts about the Cantele Primitivo, which was featured in Il Fornaio’s “Festa Regionale,” a celebration of the regional foods of Italy (February was Puglia month).

“The thing I like about Cantele Primitivo,” he said, “is that it pairs well with nearly everything. And it was great to have Cantele wines for Puglia month at Il Fornaio.”

When we asked Ross what we should order the next time we visit Il Fornaio? He didn’t miss a beat: “Battuta di Pollo. Thinly pounded chicken breast, dijon mustard marinade, grilled, topped with arugula, spicy peperoncino sauce and shaved Parmesan.”
